David, I am not aware of seat upholstery "plans" or layout of the material panels. Most people purchase the pre cut and sewn replacement covers (and foam as needed) to recover their seats. The upholstery kits are not too expensive and they are nicely made and install easily.
As for restoration tips, everyone has a different way of restoring a car, but let me offer these to you:
-Take plenty of photos and video, you might not remember a year later (or more) where that bracket goes)
-Don't throw ANYTHING away until you're done with the car. You never know what you might have to reuse or scavenge for parts.
-Work in sections. If doing a complete non-driving resto, strip it bare, do all the metal repairs, paint and body work. Then do your electrical and fuel and brake plumbing, then drivetrain, suspension and brakes, and finally the glass, interior, and trim items.
Good luck with it and remember to share some photos!
