Any ideas and thoughts on which seats would work in my 1965 Restomod Convert? I've heard about Mazda seats and Fiero seats, but dont know what it would take to install newer seating in this 1965

You won't find any production seat a pure bolt in. Some sort of relocated holes, mounting brackets, or something will need to be fabricated to install the seats. Unless you buy aftermarket seats (Corbeau, Recarro, Cobra, etc.) that come with specific bolt in brackets you'll have to measure and make something work.
Many people use late-model Mustang seats, which apparently only require two new mounting holes to be drilled to get them to work with the stock '5-'70 Mustang seat tracks.

I installed a set of 6 way power leather seats out of a 1996 intrepid. They were originally dark gray and I dyed them black. I purchased these seats for $200 (pair) at a local salvage yard. They are really nice and comfortable. To install I cut out the seat risers and bolted these to the floor. Then ran some power and now have a ride like a new car. I installed these on my 68 mustang restomod. I did have to reverse them, drivers side on the pass. side, because the electric controls would hit the door panels. But, no difference, I just reach down by the console to adjust. I also had to ditch the original arm rest pads as these seats are a little wider then original mustang seats. email me at john_taton@yahoo.com if you would like some pics.
