why is the engine offset to the right of centerline in a fox body mustang?

Most cars are because of weight balance. I just worked on a 67 fury with a 318 that just looked wrong! Especially when you looked at the hood latch and seen how off it was. I did not know this once, with a Duster. The driveshaft tunnel and all are off. I was trying to stuff a 383 in there and made a motor plate. I got real tired of pulling the motor in and out. Never looked under the car till I sold the engine and was putting the driveshaft on with the the 360 in place with factory mounts.
Oh well, Hope you did not have to go through what I did to find that out-
I left the chain used with a hoist in the tree, which is forever part of the tree now and reminds me often.
